Largest sushi mosaic

The largest sushi mosaic is 37.57 m² (404.40 ft²) and was created by Itacho Sushi (Hong Kong) at the Festival Walk in Hong Kong, China, on 8 January 2014.

The record was attempted as part of Itacho & Itamae Sushi’s 10th Anniversary celebrating ceremony and the design “10” implicated the chained restaurant will keep moving towards perfect 10.

The mosaic was made of 20647 individual pieces of sushi with ingredients including 400kg of cooked rice, 1370 eggs, 340 kg of mackerel, 360 kg of salmon, 50kg of swordfish belly, 57kg of octopus, 33.5kg of flesh of crabstick, 52.8kg of yellowtail, 39.6 kg of tuna, seaweed, vinegar, sugar & salt with a total weight of approximately 1400 kg.

All the sushi made were created on the ice rink with a surface temperature of -4 degree Celsius and were well packed and distributed to hungry visitors who attended the event from around the world and the homeless.
